- 1 pound smoked sausage, sliced
- 4 large Russet potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 packet ranch seasoning mix
- 2 tablespoons olive oil
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
- Peel and dice the potatoes into bite-sized pieces. Slice the smoked sausage into rounds or strips.
- In a large bowl, toss potatoes and sausage with olive oil, ranch seasoning, black pepper, and garlic powder until evenly coated.
- Transfer the mixture into the prepared baking dish, spreading evenly.
- Bake for 35-40 minutes until potatoes are tender and edges are crispy.
- Remove from oven, sprinkle shredded cheddar and Parmesan cheeses evenly over the top, then bake for an additional 10 minutes until bubbly and melted.
- Garnish with fresh parsley if desired. Serve hot with side salads or vegetables.
Notes
- You can substitute smoked sausage with cooked breakfast sausage or turkey sausage for a leaner variation.
- For added flavor, include chopped green onions or sautéed vegetables such as bell peppers and onions.
