Ingredients

- 4 boneless, skinless chicken breasts
- 1/4 cup honey
- 4 cloves garlic, minced
- 2 cups mixed vegetables (carrots, broccoli, bell peppers)
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Place chicken breasts in the slow cooker.
- In a small bowl, whisk together honey, garlic, soy sauce, olive oil, thyme, salt, and pepper.
- Pour sauce over chicken and cover.
- Cook on low for 6 hours or high for 3 hours.
- About an hour before serving, add vegetables to the slow cooker and cook until tender.
- Shred chicken and serve with vegetables and sauce.
Notes
- You can substitute chicken with turkey breasts or firm tofu for a vegetarian version.
- For added spice, include red pepper flakes in the sauce.
