- 1 sheet puff pastry, thawed
- 4 slices ham
- 1 cup grated Gruyere cheese
- 2 large eggs
- 1 tablespoon Dijon mustard
- 1 egg for egg wash
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C). Roll out the puff pastry on a floured surface and cut into two rectangles.
- Spread Dijon mustard over each rectangle. Layer ham and cheese on one half of each rectangle.
- Fold the other half over and seal the edges. Brush with beaten egg.
- Bake for 20-25 minutes until golden and puffed.
- While baking, fry eggs sunny side up. Place each pastry with a fried egg on top and garnish with parsley before serving.

- Ensure the puff pastry is thoroughly chilled for the best rise.
- Adjust the cheese and ham according to your taste.
