Instructions
- Preheat the oven to 250°F (120°C). Line a baking sheet with parchment paper.
- In a clean bowl, beat egg whites until soft peaks form. Gradually add caster sugar, beating until stiff and glossy.
- Gently fold in vinegar and vanilla extract.
- Spoon the meringue onto the prepared baking sheet, shaping it into a circle with a slight indent in the center.
- Bake for 1 hour and 15 minutes until crisp. Turn off the oven, leave the meringue inside to cool completely.
- Whip heavy cream with powdered sugar until soft peaks form.
- Top the cooled meringue with whipped cream and decorate with an assortment of fresh fruits and mint leaves.
