- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon

- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chopped fresh apple
- 1/4 cup brown sugar (for topping)
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk together oil, eggs, vanilla, and chopped apples.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Divide batter evenly among muffin cups. Mix brown sugar with a little cinnamon and sprinkle on top of each muffin.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool slightly before serving. Enjoy warm or at room temperature.
Notes
- You can substitute chopped pears or peaches for apples for variety.
- For a healthier option, use whole wheat flour and less sugar.
