- 1 tablespoon olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 8 ounces mushrooms, sliced
- 1 cup wild rice, rinsed
- 6 cups vegetable broth
- 1 cup coconut milk or heavy cream
- Salt and pepper to taste
- Fresh thyme or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent.
- Add minced garlic and sliced mushrooms; cook until mushrooms are tender.
- Stir in rinsed wild rice and cook for 2 minutes.
- Pour in vegetable broth, bring to a boil, then reduce heat and simmer covered for about 45 minutes or until rice is tender.
- Stir in coconut milk or heavy cream and season with salt and pepper.
- Simmer for an additional 5 minutes. Garnish with fresh herbs before serving.
Notes
- You can substitute coconut milk with almond or oat milk for a lighter option.
- Serve with crusty bread for a complete meal.
