- 4 boneless, skinless chicken breasts

- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt, pepper, and Italian seasoning.
- Cook chicken until golden and cooked through, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, sauté garlic until fragrant, about 1 minute.
- Add sun-dried tomatoes and cook for 2 minutes.
- Pour in heavy cream, Parmesan, and stir well.
- Add spinach and simmer until wilted, about 2 minutes.
- Return chicken to the skillet, spoon sauce over, and cook for another 2 minutes to meld flavors.

- You can substitute heavy cream with coconut cream for a dairy-free option.
