- 1.5 lbs beef chuck roast, cut into chunks
- 4 large potatoes, sliced
- 2 cups shredded sharp cheddar cheese
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Brown the beef chunks until seared on all sides.
- Layer sliced potatoes in the bottom of the slow cooker. Top with browned beef, sliced onion, and garlic.
- Pour beef broth over the ingredients. Cover and cook on low for 6-8 hours.
- In the last 30 minutes, sprinkle shredded cheddar over the top and cover to allow cheese to melt.
- Garnish with fresh parsley before serving. Enjoy warm!

- You can substitute ground beef for beef chunks for quicker cooking.
- For extra flavor, add sliced mushrooms or cooked bacon.
