- 8 ounces penne pasta
- 1 pound ground beef
- 1 can Rotel diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add ground beef, cook until browned, breaking it apart as it cooks.
- Add garlic powder, cumin, salt, and pepper to the beef. Stir and cook for 2 minutes.
- Drain excess fat if needed, then add Rotel tomatoes to the skillet. Simmer for 5 minutes.
- Reduce heat to low, stir in sour cream and shredded cheddar cheese until melted and creamy.
- Mix in cooked pasta until well coated. Garnish with chopped cilantro and serve hot.
Notes
- Can substitute ground turkey or chicken for a leaner option.
- Add chopped jalapenos for extra spice.
- For a creamier texture, stir in additional sour cream or cream cheese.
