  • 1 pound ground beef
  • 1 can Rotel diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add ground beef, cook until browned, breaking it apart as it cooks.
  3. Add garlic powder, cumin, salt, and pepper to the beef. Stir and cook for 2 minutes.
  4. Drain excess fat if needed, then add Rotel tomatoes to the skillet. Simmer for 5 minutes.
  5. Reduce heat to low, stir in sour cream and shredded cheddar cheese until melted and creamy.
  6. Mix in cooked pasta until well coated. Garnish with chopped cilantro and serve hot.
