- 8 oz (225g) of spaghetti or your favorite pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup sliced mushrooms
- 2 cups fresh spinach leaves
- 1 cup grated parmesan cheese
- 1 cup heavy cream or half-and-half
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
- Add sliced mushrooms and cook until browned, about 5 minutes.
- Pour in heavy cream and bring to a gentle simmer. Stir in parmesan cheese until melted and the sauce thickens.
- Add fresh spinach and cook until wilted, about 2 minutes.
- Mix in cooked pasta, season with salt and pepper, and toss to coat evenly.
Notes
- You can substitute half-and-half for heavy cream for a lighter version.
- For added protein, include cooked chicken or shrimp.
- Garnish with extra parmesan and fresh herbs before serving.
