- 1 pound Italian sausage, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage slices and cook until browned. Remove and set aside.
- In the same pot, sauté onions and garlic until fragrant and softened.
- Return sausage to the pot, add chicken broth, and bring to a boil.
- Reduce heat and stir in heavy cream, spinach, and Parmesan cheese. Cook until greens are wilted and soup is heated through.
- Season with salt and pepper. Serve hot with extra Parmesan if desired.

- You can substitute turkey sausage for a leaner option.
- For a thicker soup, simmer uncovered until slightly reduced.
