A hearty, creamy Italian sausage gnocchi soup featuring savory sausage, tender gnocchi, and a rich broth. Perfect for a comforting meal on chilly evenings.

  • Total Time: 40 minutes
  • Yield: 4-6 servings

Ingredients

Scale
  • 1 pound Italian sausage, casings removed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 package (16 oz) potato gnocchi
  • 1 cup heavy cream
  • 2 cups fresh spinach, chopped
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned. Remove and set aside.
  2. In the same pot, sauté diced onion and minced garlic until fragrant and translucent.
  3. Pour in chicken broth and bring to a boil. Add the sausage back into the pot.
  4. Stir in Italian herbs, salt, and pepper. Add gnocchi and cook until they float and are tender, about 3-4 minutes.
  5. Reduce heat, stir in heavy cream and chopped spinach. Cook until spinach wilts and soup is heated through.
  6. Serve hot, garnished with additional herbs if desired.

Notes

  • You can substitute ground beef or turkey for Italian sausage for a leaner option.
  • Add red pepper flakes for a spicy kick.
  • Use fresh spinach or kale for more greens.
