- 1 pound Italian sausage, casings removed
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 package (16 oz) potato gnocchi
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned. Remove and set aside.
- In the same pot, sauté diced onion and minced garlic until fragrant and translucent.
- Pour in chicken broth and bring to a boil. Add the sausage back into the pot.
- Stir in Italian herbs, salt, and pepper. Add gnocchi and cook until they float and are tender, about 3-4 minutes.
- Reduce heat, stir in heavy cream and chopped spinach. Cook until spinach wilts and soup is heated through.
- Serve hot, garnished with additional herbs if desired.
Notes
- You can substitute ground beef or turkey for Italian sausage for a leaner option.
- Add red pepper flakes for a spicy kick.
- Use fresh spinach or kale for more greens.
