- 4 chicken breasts or thighs
- 4 medium potatoes, diced
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1 cup heavy cream or whole milk
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Place chicken and diced potatoes in the crockpot.
- In a bowl, mix garlic, Parmesan, cream, olive oil, Italian seasoning, salt, and pepper.
- Pour the mixture over the chicken and potatoes.
- Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender and potatoes are cooked.
- Shred the chicken if desired and toss everything to coat with sauce.
- Garnish with chopped parsley before serving.
Notes
- You can substitute heavy cream with Greek yogurt for a lighter version.
- Serve with steamed vegetables or over rice for extra fullness.
