- 1 pound ground beef or chicken
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups diced potatoes
- 1 cup corn kernels
- 1 can (10.5 oz) cream of mushroom soup
- 2 cups chicken broth
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook ground meat until browned. Remove excess fat.
- Add chopped onion and minced garlic, sauté until translucent.
- Stir in diced potatoes, corn, paprika, salt, and pepper.
- Pour in chicken broth and cream of mushroom soup, stir well.
- Bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender.
- Stir in shredded cheese until melted and creamy.
- Serve hot, garnished with fresh parsley.

- You can substitute ground beef with ground turkey or chicken for a leaner option.
- For added spice, include chopped jalapeños or a dash of hot sauce.
