- 1 tablespoon olive oil
- 2 chicken breasts, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 package (9 oz) cheese tortellini
- 2 cups broccoli florets
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a boil.
- Add tortellini and broccoli, cook according to package instructions, about 3-5 minutes.
- Reduce heat to low, stir in heavy cream and Parmesan cheese, cook until sauce thickens, about 2 minutes.
- Season with salt and pepper, serve hot garnished with extra Parmesan if desired.
Notes
- Feel free to add red pepper flakes for a spicy kick.
- You can substitute spinach for broccoli for a different veggie twist.
- For a healthier option, use light cream or skim milk.
