- 3 carrots, diced
- 2 celery stalks, sliced
- 4 cups chicken broth
- 2 cups cooked shredded chicken
- 1 package potato gnocchi (about 1 lb)
- 2 cups fresh spinach
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent.
- Stir in minced garlic, diced carrots, and sliced celery. Cook until vegetables are tender.
- Add chicken broth and bring to a boil.
- Reduce heat and add cooked shredded chicken.
- Stir in gnocchi and cook until they float to the surface, about 3-4 minutes.
- Lower the heat and stir in fresh spinach and heavy cream.
- Season with salt and pepper, simmer for a few minutes, and serve hot.

- You can substitute cooked turkey or beef for chicken.
- For a gluten-free option, use gluten-free gnocchi or pasta.
- Make it spicier by adding red pepper flakes.
