- 2 lbs boneless skinless chicken breasts, cubed
- 3 cups fresh spinach, chopped
- 1 cup shredded mozzarella cheese
- 1 cup sour cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup cooked rice (optional, for serving)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add garlic and cook until fragrant.
- Add chicken cubes, paprika, salt, and pepper. Cook until chicken is browned and cooked through.
- In a large bowl, combine cooked chicken, chopped spinach, sour cream, mozzarella, and Parmesan cheese.
- Transfer mixture to a greased baking dish and spread evenly.
- Bake uncovered for 25-30 minutes until bubbly and golden on top.
- Serve hot over cooked rice or as is, garnished with fresh herbs if desired.
Notes
- You can substitute Greek yogurt for sour cream for a healthier option.
- Add cooked mushrooms or bell peppers for extra flavor and veggies.
- Best enjoyed fresh but can be stored refrigerated for 2 days and reheated.
