- 4 large russet potatoes, peeled and cubed
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 1 tablespoon olive oil
- 1 pound smoked sausage, sliced
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Grease a baking dish.
- Boil potatoes until tender, then drain and mash slightly.
- In a bowl, mix mashed potatoes with ranch dressing, half of the cheese, salt, and pepper.
- Spread the potato mixture in the baking dish and top with sliced smoked sausage, remaining cheese, and a drizzle of olive oil.
- Bake for 20-25 minutes until cheese is bubbly and golden.
- Garnish with chopped parsley before serving.

- You can substitute with turkey sausage for a leaner option.
