- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, sliced
- 2 teaspoons Cajun seasoning
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup diced tomatoes
- 8 ounces penne or pasta of choice
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season chicken slices with Cajun seasoning.
- Add chicken to skillet and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, add garlic and sauté until fragrant, about 30 seconds.
- Pour in heavy cream and diced tomatoes, bringing to a simmer. Cook for 3-4 minutes until slightly thickened.
- Add cooked pasta and chicken to the sauce, stirring to combine. Season with salt and pepper.
- Serve hot, garnished with chopped parsley.
Notes
- Adjust the Cajun seasoning to spice preference.
- For a healthier version, use half-and-half or light cream.
- Serve with crusty bread or a side salad for a complete meal.
