- 1 medium butternut squash, peeled and cubed
- 1 1/2 cups all-purpose flour
- 1 large egg
- Salt and pepper to taste
- 1 lb Italian sausage links, sliced
- 2 tbsp olive oil

Instructions
- Roast or boil the butternut squash until soft, then mash until smooth.
- In a bowl, combine mashed squash, flour, egg, salt, and pepper to form a dough.
- On a floured surface, shape the dough into a roll and cut into bite-sized pieces, then gently shape into gnocchi.
- Cook gnocchi in boiling salted water until they float, then drain.
- In a skillet, heat olive oil and cook sausage slices until browned and crispy.
- Add cooked gnocchi to the skillet with sausage, toss gently to coat in the flavors, and cook for another 2-3 minutes.
- Garnish with fresh herbs and serve hot.

- For a vegan version, substitute the egg with flaxseed meal and use plant-based sausage.
