Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup sour cream
  • 1 cup chicken broth
  • 2 tablespoons all-purpose flour
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and garlic, cook until translucent.
  3. Add mushrooms and cook until browned.
  4. In a bowl, mix sour cream, chicken broth, flour, paprika, salt, and pepper.
  5. Add cooked vegetables and shredded chicken to the sauce mixture, stir well.
  6. Pour the mixture into a baking dish, bake uncovered for 25-30 minutes until bubbly and golden.
  7. Garnish with fresh parsley before serving.
