Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups sliced mushrooms
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup sour cream
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sear chicken breasts until golden brown on both sides. Remove and set aside.
  3. Sauté onions and garlic until translucent. Add sliced mushrooms and cook until tender.
  4. In a bowl, mix sour cream and chicken broth. Add to the skillet with mushrooms, stirring well.
  5. Place seared chicken in a baking dish. Pour mushroom sauce over the chicken.
  6. Bake uncovered for 25-30 minutes until chicken is cooked through.
  7. Garnish with chopped parsley before serving.
