- 4 boneless, skinless chicken breasts
- 2 cups sliced mushrooms
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup sour cream
- 1 cup chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sear chicken breasts until golden brown on both sides. Remove and set aside.
- Sauté onions and garlic until translucent. Add sliced mushrooms and cook until tender.
- In a bowl, mix sour cream and chicken broth. Add to the skillet with mushrooms, stirring well.
- Place seared chicken in a baking dish. Pour mushroom sauce over the chicken.
- Bake uncovered for 25-30 minutes until chicken is cooked through.
- Garnish with chopped parsley before serving.
Notes
- Serve with rice or polenta for a complete meal.
- Adjust seasonings to taste, add a pinch of paprika for extra flavor.
