A rich and creamy cinnamon cheesecake with a buttery graham cracker crust, infused with warming cinnamon spice, perfect for special occasions or cozy nights.

Ingredients

  • 200g graham crackers
  • 100g unsalted butter, melted
  • 600g cream cheese, softened
  • 150g granulated sugar
  • 3 large eggs
  • 200ml sour cream
  • 1 tbsp ground cinnamon
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 170°C (340°F). Crush graham crackers into fine crumbs.
  2. Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan to form a crust.
  3. In a large bowl, beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in sour cream, cinnamon, and vanilla extract until combined.
  6. Pour filling over the crust and smooth the top.
  7. Bake for 50-60 minutes until the center is slightly wobbly.
  8. Cool in the oven with the door ajar, then refrigerate for at least 4 hours before serving.

Notes

  • For best flavor, use full-fat cream cheese and sour cream.
  • Sprinkle extra cinnamon and a dusting of powdered sugar on top before serving.
