- 200g graham crackers
- 100g unsalted butter, melted
- 600g cream cheese, softened
- 150g granulated sugar
- 3 large eggs
- 200ml sour cream
- 1 tbsp ground cinnamon
- 1 tsp vanilla extract
Instructions
- Preheat oven to 170°C (340°F). Crush graham crackers into fine crumbs.
- Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan to form a crust.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in sour cream, cinnamon, and vanilla extract until combined.
- Pour filling over the crust and smooth the top.
- Bake for 50-60 minutes until the center is slightly wobbly.
- Cool in the oven with the door ajar, then refrigerate for at least 4 hours before serving.
Notes
- For best flavor, use full-fat cream cheese and sour cream.
- Sprinkle extra cinnamon and a dusting of powdered sugar on top before serving.
