- 1 cup shredded sharp cheddar cheese
- 1 cup all-purpose flour
- 1/4 cup unsalted butter, cold
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- Hot pepper jelly for topping
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a bowl, combine shredded cheese, flour, salt, black pepper, and cayenne if using.
- Add cold butter and cut in with a pastry cutter or fingers until mixture resembles coarse crumbs.
- Form dough into a disk, wrap in plastic, and chill for 15 minutes.
- Roll out dough on a floured surface to about 1/4 inch thick.
- Cut into 2-inch circles using a cookie cutter.
- Place circles on prepared baking sheet. Using your thumb or a small spoon, make a small indentation in the center of each.
- Bake for 10-12 minutes until edges are golden.
- Let cool slightly, then top each with a spoonful of hot pepper jelly before serving.

- Chill dough for easier handling and to prevent spreading.
