- 1 pound cooked ground beef or sliced sirloin
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup shredded provolone or cheddar cheese
- 1/2 cup sour cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onions and garlic; sauté until translucent.
- Add ground beef or sliced steak, cook until browned. Season with salt and pepper.
- Stir in diced potatoes and cook for 5 minutes, then pour in beef broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
- Lower heat and stir in shredded cheese and sour cream until melted and smooth.
- Serve hot, garnished with chopped green onions and additional cheese if desired.
Notes
- For a thicker soup, mash some of the potatoes before serving.
- Use a sharp cheese like provolone for authentic flavor.
- Replace beef with sliced turkey or chicken for variation.
