Instructions
- Start by seasoning the chicken with salt and pepper. Cut into small, bite-sized pieces or strips suitable for sliders.
- Set up a breading station with three shallow dishes: flour, beaten eggs, and panko breadcrumbs. Dip each chicken piece into the flour, then egg, then coat generously with panko breadcrumbs.
- Heat cooking oil in a deep skillet or frying pan over medium-high heat. Fry breaded chicken in batches until golden and cooked through, about 4-5 minutes per batch. Drain on paper towels.
- In a mixing bowl, combine mayonnaise, sweet chili sauce, honey, rice vinegar, and sriracha. Mix thoroughly until smooth. Adjust spice level to taste.
- Toast slider buns until lightly golden. Spread a generous spoonful of sauce on each bun’s bottom half. Add lettuce leaves if desired, then chicken pieces. Drizzle more sauce, garnish with cilantro or green onions, and cap with the top bun. Repeat for each slider.
