Ingredients
Scale
- 1 ½ cups all-purpose flour
- 2 cups granulated sugar
- 1 cup unsalted butter, melted
- 4 large eggs
- 1/4 cup freshly grated lemon zest
- 1/2 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine flour and melted butter until the mixture resembles coarse crumbs. Press evenly into a greased 9×13-inch baking dish and bake for 15 minutes until lightly golden.
- While the crust bakes, whisk together eggs, sugar, lemon zest, lemon juice, and vanilla extract until smooth. Pour this mixture over the pre-baked crust, spreading evenly.
- Return the dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly firm around the edges. Allow to cool completely before dusting with powdered sugar.
- Sprinkle powdered sugar on top for presentation. Cut into squares and serve chilled or at room temperature for the best citrus treat. Optionally, garnish with fresh fruit or mint leaves.
Notes
- Use freshly grated lemon zest for maximum flavor.
- Ensure the lemon filling is fully cooled before slicing to prevent crumbling.
- Add a dash of lemon extract to the filling for an extra citrus punch.
