- 1 pound ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can black beans (15 oz), drained
- 1 can corn (15 oz), drained
- 1 packet taco seasoning
- 4 cups beef or chicken broth
- Salt and pepper to taste
- Shredded cheddar cheese
- Fresh cilantro, chopped
- Tortilla chips, for garnish
Instructions
- In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
- Add diced onion and garlic; cook until softened, about 5 minutes.
- Stir in diced tomatoes, black beans, corn, taco seasoning, and broth. Bring to a boil.
- Reduce heat and simmer for 20 minutes to allow flavors to meld.
- Season with salt and pepper as needed. Serve hot topped with cheese, cilantro, and tortilla chips.
Notes
- Can be made vegetarian by replacing beef with sautéed mushrooms or plant-based ground meat.
- Adjust spice level with more or less taco seasoning.
