- 4 bone-in chicken thighs
- 1 cup pineapple chunks
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, mix soy sauce, honey, olive oil, garlic powder, smoked paprika, salt, and pepper.
- Marinate chicken thighs in half of the sauce mixture for at least 15 minutes.
- Arrange chicken and vegetables on a large sheet pan.
- Drizzle remaining sauce over the ingredients.
- Bake for 35-40 minutes until chicken is cooked through and vegetables are tender.
- Serve hot garnished with fresh herbs.
Notes
- For extra smoky flavor, broil for the last 2-3 minutes.
- Best served with steamed rice or tropical sides.
