- 1 lb ground beef (preferably 80% lean)
- Salt and pepper to taste
- 1 tsp garlic powder
- 1 tsp onion powder
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup sliced pickles
- 1/4 cup diced onions
- Optional toppings: lettuce, tomato, sour cream
- Cooking oil or spray
Instructions
- Divide the ground beef into four equal portions, form into loose balls, and season with salt, pepper, garlic powder, and onion powder.
- Heat a skillet over high heat and add oil or spray. Place beef balls on skillet and smash flat with a spatula about 1/4 inch thick. Cook for 2-3 minutes until edges are crispy and browned, then flip and cook 1-2 more minutes. Remove and set aside.
- Lay a tortilla flat, sprinkle with shredded cheese, add the smashed beef patty, pickles, diced onions, and optional toppings. Cover with another layer of cheese and top with another tortilla.
- Heat a skillet or griddle over medium heat. Cook the assembled quesadilla for 3-4 minutes per side until golden brown and crispy. Slice into wedges and serve hot.
