Perfect for busy weeknights, this 20-minute recipe combines the best of burgers, tacos, and cheesy goodness to create an irresistible meal that will impress family and friends alike.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 1 lb ground beef (preferably 80% lean)
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced pickles
  • 1/4 cup diced onions
  • Optional toppings: lettuce, tomato, sour cream
  • Cooking oil or spray

Instructions

  1. Divide the ground beef into four equal portions, form into loose balls, and season with salt, pepper, garlic powder, and onion powder.
  2. Heat a skillet over high heat and add oil or spray. Place beef balls on skillet and smash flat with a spatula about 1/4 inch thick. Cook for 2-3 minutes until edges are crispy and browned, then flip and cook 1-2 more minutes. Remove and set aside.
  3. Lay a tortilla flat, sprinkle with shredded cheese, add the smashed beef patty, pickles, diced onions, and optional toppings. Cover with another layer of cheese and top with another tortilla.
  4. Heat a skillet or griddle over medium heat. Cook the assembled quesadilla for 3-4 minutes per side until golden brown and crispy. Slice into wedges and serve hot.

Notes

  • Allow leftovers to cool completely before wrapping or storing in an airtight container.
  • Reheat in the oven or air fryer for crispy results; avoid microwaving to maintain crunch.
  • Feel free to customize toppings like jalapeños, lettuce, or tomato.
