Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or non-stick spray and set aside. Grate the zucchini and squeeze out excess moisture.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, beat the eggs, sugar, and vegetable oil until smooth, then stir in vanilla extract. Mix in the grated zucchini.
  4. Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Fold in nuts or chocolate chips if using.
