- 2 pounds of beef chuck roast, cut into chunks
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 can (14 oz) coconut milk
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 cup beef broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Start by cutting the beef into bite-sized chunks. Dice the onion, mince the garlic and ginger, and prepare the vegetables.
- For enhanced flavor, sear the beef chunks in a hot skillet until browned on all sides. This step is optional but recommended.
- Add the beef, onion, garlic, ginger, curry powder, turmeric, cumin, carrots, potatoes, coconut milk, and beef broth into the slow cooker. Stir well to combine all ingredients.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours until the beef is tender and flavors meld.
- Remove the lid during the last 30 minutes if you prefer a thicker sauce, allowing it to reduce slightly.
- Taste and adjust salt and pepper. Garnish with chopped cilantro. Serve hot over rice or with naan bread.
