  • Total Time: 15 minutes + 7-8 hours or 4-5 hours
  • Yield: 6 servings

Ingredients

Scale
  • 2 pounds of beef chuck roast, cut into chunks
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 can (14 oz) coconut milk
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 1 cup beef broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Start by cutting the beef into bite-sized chunks. Dice the onion, mince the garlic and ginger, and prepare the vegetables.
  2. For enhanced flavor, sear the beef chunks in a hot skillet until browned on all sides. This step is optional but recommended.
  3. Add the beef, onion, garlic, ginger, curry powder, turmeric, cumin, carrots, potatoes, coconut milk, and beef broth into the slow cooker. Stir well to combine all ingredients.
  4. Cover and cook on low for 7-8 hours or on high for 4-5 hours until the beef is tender and flavors meld.
  5. Remove the lid during the last 30 minutes if you prefer a thicker sauce, allowing it to reduce slightly.
  6. Taste and adjust salt and pepper. Garnish with chopped cilantro. Serve hot over rice or with naan bread.

Notes

  • Optional: Searing the beef enhances flavor and richness.
  • For a thicker sauce, reduce uncovered during the last 30 minutes of cooking.
  • Use fresh cilantro for the best garnish and flavor.
