- 4 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 pineapple, sliced
- Green onions for garnish
Instructions
- Place chicken breasts in the crockpot.
- Mix pineapple juice, honey, soy sauce, garlic, and ginger in a bowl and pour over chicken.
- Cook on low for 6 hours or until chicken is tender.
- Shred chicken in the crockpot and stir to coat with sauce.
- Serve over rice, topped with pineapple slices and chopped green onions.
Notes
For extra flavor, add red pepper flakes or sesame seeds. Great with steamed rice or vegetables.
