- 1 pound smoked sausage, sliced
- 4 large russet potatoes, cubed
- 1 cup shredded sharp cheddar cheese
- 1/2 cup sour cream
- 2 tablespoons ranch seasoning mix
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper or lightly grease it.
- Wash and cube the potatoes evenly; slice the sausage into bite-sized pieces.
- In a large bowl, toss the potatoes, sausage, olive oil, ranch seasoning, garlic powder, salt, and pepper until well coated.
- Spread the mixture evenly on the prepared sheet pan.
- Roast for 25-30 minutes, or until the potatoes are tender and golden brown.
- Remove from oven, sprinkle shredded cheddar cheese over the top, and bake for an additional 5 minutes until the cheese melts.
- Serve hot, garnished with sour cream and parsley if desired.
