- 4 boneless, skinless chicken breasts
- 2 cups mixed bell peppers and cherry tomatoes
- 1 red onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat skillet over medium heat and add 1 tablespoon olive oil.
- Season chicken breasts with salt, pepper, and paprika.
- Add chicken to skillet and cook until golden brown, about 6-7 minutes per side.
- Remove chicken and set aside. In the same skillet, add remaining olive oil and sauté garlic and onions until fragrant.
- Add peppers and cherry tomatoes, cook until vegetables are tender.
- Return chicken to skillet, simmer for 5 minutes to combine flavors.
- Garnish with fresh parsley before serving.
