- 1 medium onion, chopped
- 3 garlic cloves, minced
- 3 carrots, diced
- 3 celery stalks, diced
- 4 cups chicken broth
- 2 cups cooked shredded chicken
- 1 package (16 oz) potato gnocchi
- 1 cup heavy cream
- 2 cups baby spinach, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, carrots, and celery. Cook until vegetables are tender.
- Pour in chicken broth and bring to a boil.
- Add cooked shredded chicken and potato gnocchi. Reduce heat and simmer for 8-10 minutes until gnocchi are tender.
- Stir in heavy cream and chopped spinach. Cook for another 2-3 minutes until heated through.
- Season with salt and pepper to taste. Serve hot garnished with fresh herbs if desired.
