- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- Chopped walnuts and shredded carrots for topping
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a baking pan with parchment paper.
- In a mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, beat eggs, granulated sugar, and brown sugar until fluffy. Gradually add oil and vanilla, mixing well.
- Stir in grated carrots until combined. Add dry ingredients gradually, mixing until just combined.
- Pour batter into the prepared pan and bake for 35-40 minutes or until a toothpick inserted comes out clean.
- Allow to cool completely in the pan.
- For the frosting, beat cream cheese, butter, powdered sugar, and vanilla until smooth and creamy.
- Spread the frosting evenly over cooled cake bars. Top with chopped walnuts and shredded carrots.
