- 1 pound ground beef or turkey
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups beef or chicken broth
- 1 can (14.5 oz) crushed tomatoes
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 8 oz cooked lasagna noodles, broken into pieces
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, cook the ground meat over medium heat until browned. Add chopped onion and garlic, cook until softened.
- Pour in broth and crushed tomatoes, stir in Italian seasoning, salt, and pepper. Bring to a boil.
- Add broken lasagna noodles and simmer until noodles are tender, about 10 minutes.
- Stir in ricotta cheese until well combined. Top with shredded mozzarella before serving.
Notes
- Feel free to add spinach or mushrooms for extra nutrition.
- Use ground chicken or plant-based meat for a vegetarian or vegan version.
