Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a mixing bowl, beat eggs and sugar until fluffy. Add vanilla extract.
- Gently fold in flour until just combined.
- Pour batter onto the prepared baking sheet and bake for 12-15 minutes.
- While hot, invert cake onto a clean towel dusted with powdered sugar. Carefully peel off parchment and roll the cake with the towel. Let cool.
- In a bowl, beat softened cream cheese, powdered sugar, and lemon juice until smooth.
- Unroll the cooled cake. Spread cream cheese mixture evenly over the surface.
- Scatter pitted cherries over the filling. Re-roll the cake carefully without the towel.
- Chill for at least 2 hours. Dust with powdered sugar before serving.
