Ingredients
Scale
- 3 ripe bananas, mashed
- 1/2 cup granulated sugar
- 1/3 cup vegetable oil or melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips (semi-sweet or dark)
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly.
- In a large bowl, whisk together mashed bananas, sugar, oil, eggs, and vanilla until smooth.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture, stirring gently until just combined.
- Fold in chocolate chips evenly throughout the batter.
- Spoon batter into muffin cups about 3/4 full. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use very ripe bananas for the best flavor and natural sweetness.
- Avoid overmixing to keep muffins tender and moist.
- Feel free to add chopped nuts or dried fruit for variety.
- For gluten-free options, substitute with a gluten-free flour blend.
