Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, cook until translucent.
- Add ground turkey, season with paprika, thyme, salt, and pepper. Cook until browned and cooked through.
- In a baking dish, toss diced sweet potatoes with a tablespoon of olive oil and season lightly with salt.
- Spread sweet potatoes evenly in the dish, then top with cooked turkey mixture.
- Sprinkle shredded cheese over the top.
- Bake for 25-30 minutes until sweet potatoes are tender and cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
