- 1 pound Italian sausage or ground beef
- 1 small onion, chopped
- 3 garlic cloves, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef or chicken broth
- 1 teaspoon Italian seasoning
- 8 oz lasagna noodles, broken
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- In a skillet, brown the sausage or beef with chopped onion and garlic until cooked through. Drain excess fat.
- Transfer the cooked meat mixture to the slow cooker. Add crushed tomatoes, broth, Italian seasoning, and broken lasagna noodles.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 15 minutes before serving, stir in shredded mozzarella and Parmesan cheeses until melted.
- Serve hot, garnished with fresh basil leaves. Enjoy your hearty lasagna soup!
