Ingredients
- For the meatballs: 1 lb ground beef, 1/2 cup bread crumbs, 1/4 cup chopped onion, 1/4 cup milk, 1 egg, salt and pepper to taste
- For the soup: 4 cups beef broth, 2 medium potatoes, 2 carrots, 1/2 cup chopped celery, 1/2 cup sour cream, fresh dill for garnish, salt and pepper as needed
Instructions
- In a mixing bowl, combine ground beef, bread crumbs, chopped onion, milk, egg, salt, and pepper. Form into small meatballs.
- In a large pot, bring beef broth to a boil. Add diced potatoes, carrots, and celery. Cook until vegetables are tender.
- Gently add meatballs to the simmering broth. Cook for about 10 minutes until meatballs are cooked through.
- Stir in sour cream for creaminess and season with salt and pepper. Garnish with fresh dill before serving.

- You can substitute ground turkey for a lighter option.
- Add a splash of lemon juice for extra brightness.
