- 2 lbs beef stew meat, cubed
- 3 carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can diced tomatoes
- 1 teaspoon paprika
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef cubes over medium heat until browned on all sides.
- Add chopped onion and minced garlic; cook until fragrant.
- Stir in tomatoes, carrots, potatoes, paprika, thyme, salt, and pepper.
- Pour in beef broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 1.5 to 2 hours until meat is tender.
- Adjust seasoning as needed and serve hot with crusty bread.
Notes
- For extra flavor, add a splash of Worcestershire sauce or a dash of hot sauce.
- Best served with fresh crusty bread or cornbread.
