- 8 oz (225 g) spaghetti or your favorite pasta
- 2 cups fresh spinach leaves
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
- Add cherry tomatoes and cook for 2-3 minutes until slightly softened.
- Stir in spinach and cook until wilted, about 2 minutes.
- Combine cooked pasta with the sautéed vegetables. Toss well to coat.
- Season with salt and pepper. Garnish with fresh basil and serve hot.
Notes
- You can add grated Parmesan cheese for extra flavor.
- For a vegan version, omit cheese or use vegan cheese alternatives.
