  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut a pocket into each chicken breast by slicing horizontally without cutting all the way through.
  3. In a skillet, heat olive oil over medium heat. Sauté garlic until fragrant, then add spinach and cook until wilted. Season with salt, pepper, and Italian seasoning.
  4. Stuff each chicken breast with an equal amount of spinach and cheese. Secure with toothpicks if necessary.
  5. Place stuffed chicken breasts in a baking dish. Drizzle with olive oil and season with salt and pepper.
  6. Bake for 25-30 minutes until chicken is cooked through and cheese is melted and bubbly.
