- 8 oz pasta (penne or spaghetti)
- 2 cups fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Stir in cherry tomatoes and cook for 3-4 minutes until they soften slightly.
- Add chopped spinach and cook until wilted, about 2 minutes.
- Combine the cooked pasta with the vegetables in the skillet and toss well.
- Sprinkle with grated Parmesan cheese, salt, and pepper. Serve hot garnished with fresh basil.
Notes
- Feel free to add a pinch of red pepper flakes for some heat.
- You can substitute Parmesan with nutritional yeast for a vegan version.
