- 1 lb ground turkey
- 2 large sweet potatoes, peeled and cubed
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add ground turkey and cook until browned, about 5-7 minutes. Season with garlic powder, paprika, salt, and pepper.
- While turkey cooks, toss sweet potato cubes with a little olive oil and season with salt and pepper.
- Spread sweet potatoes in a baking dish and roast in the oven for 15 minutes.
- Remove from oven, add cooked ground turkey over the sweet potatoes, and return to oven for another 15-20 minutes until sweet potatoes are tender.
- Garnish with chopped parsley before serving.
Notes
- You can add chopped onions or spinach to boost flavor and nutrition.
- Use a meat thermometer to ensure turkey is cooked to 165°F (74°C).
