Ingredients

  • 1 lb ground turkey
  • 2 large sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add ground turkey and cook until browned, about 5-7 minutes. Season with garlic powder, paprika, salt, and pepper.
  3. While turkey cooks, toss sweet potato cubes with a little olive oil and season with salt and pepper.
  4. Spread sweet potatoes in a baking dish and roast in the oven for 15 minutes.
  5. Remove from oven, add cooked ground turkey over the sweet potatoes, and return to oven for another 15-20 minutes until sweet potatoes are tender.
  6. Garnish with chopped parsley before serving.
