Ingredients
Scale
- 1 cup fresh or canned sweet corn kernels
- 1 cup all-purpose flour
- 1/2 cup grated cheese (cheddar, monterey jack, or your favorite)
- 2 large eggs
- 1/4 cup milk
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh cilantro or parsley (optional)
- Oil for frying (vegetable or canola oil recommended)
Instructions
- In a large mixing bowl, whisk together the eggs and milk until well combined. In a separate bowl, whisk the flour, baking powder, salt, and pepper. Gradually add the dry ingredients to the wet mixture, stirring gently until smooth. Fold in the corn, cheese, and herbs if using.
- Heat oil in a deep skillet or frying pan over medium-high heat until shimmering. Using a tablespoon or small scoop, drop portions of the batter into the hot oil, flattening them slightly with the back of the spoon. Fry for about 2-3 minutes on each side until golden brown and crispy. Drain on paper towels to remove excess oil.
- Serve these hot with your favorite dipping sauces, such as sour cream, spicy salsa, or a tangy aioli. For added flavor, sprinkle with additional herbs or a dash of hot sauce. Enjoy as a snack or appetizer!
Notes
- Ensure oil is hot before frying to achieve maximum crispiness.
- Leftover fritters can be stored in an airtight container in the refrigerator for up to 2 days and reheated in an oven or air fryer for best crispness.
- Mix in additional herbs or spices to customize flavor profiles.
