- 4 boneless, skinless chicken breasts
- 1 pound baby potatoes, halved
- 3 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Place chicken breasts and potatoes in the crockpot.
- In a small bowl, mix garlic, parmesan, olive oil, Italian seasoning, salt, and pepper.
- Spread the mixture over the chicken and potatoes.
- Cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked and potatoes are tender.
- Shred the chicken if desired and garnish with fresh parsley before serving.
Notes
For extra flavor, add a sprinkle of shredded mozzarella or a squeeze of fresh lemon juice before serving. Best served with steamed vegetables or a fresh green salad.
